Specific heat capacity of a substance is the amount of energy required to raise the temperature of a unit mass of the substance by one degree. For metals, the ability to conduct heat and allow temperature rise throughout the metal is dependent on the electrons of the metal, that is why they differ. For example, aluminum has more less electrons than gold, so it is worse at conducting heat throughout itself and has a higher specific heat capacity.
